Why Their Burgers Last Forever

We all know meat spoils after a while. For some disgusting reason, that never seems to happen to a McDonald’s burger. Back in 2008, Karen Hanrahan shared an experiment on her blog, Best of Mother Earth. She had photographed a McDonald’s hamburger she bought in 1996. The unveiling, 12 years later, revealed a patty that looked nearly identical. She claimed the burger didn’t rot because it was a “chemical food.”
According to Serious Eats, it comes down to water. It’s small, thin, and cooked well-done on a very hot griddle. These factors cause rapid moisture loss, resulting in a burger that dries out long before it can start to rot. The burgers cook at a very high temperature, killing any bacteria that would aid in decay.
